  • 2 cups Fresh lime juice
  • 1 cup Red onion, very thinly sliced
  • 2 Ají limo or jalapeños, finely sliced
  • 1/2 cup Cilantro, chopped
  • 2 tsp Kosher salt
  • 12–16 Cooked sweet potato, slices (for serving)
  • 1 1/3 cups Cooked corn (choclo) or hominy (for serving)

Instructions

  1. Step 1: Chill bowl. Toss fish with salt.
  2. Step 2: Add lime juice; stand 8–12 minutes until edges go opaque.
  3. Step 3: Fold in onion, ají, and cilantro. Adjust salt/lime.
  4. Step 4: Serve immediately with sweet potato and corn.
