Ingredients
Family portion- 12 Empanada dough discs
- 480 g Ground beef
- 2 small Onions, finely chopped
- 4 tsp Paprika
- 2 tsp Ground cumin
- 16 Green olives, chopped
- 2 Hard-boiled eggs, chopped
- 8 tbsp Beef stock or water
- to taste Salt & pepper
- 2 Eggs (for wash)
Instructions
- Step 1: Sauté onion; add beef and brown. Stir in paprika, cumin, salt, pepper, and stock; simmer 3–4 minutes. Cool.
- Step 2: Mix in olives and egg. Fill discs with ~2 tbsp filling.
- Step 3: Fold, crimp (repulgue), brush with egg wash.
- Step 4: Bake 400°F (200°C) 20–25 minutes or fry 350°F (175°C) until golden; rest 5 minutes.
