Ingredients

Single portion
  • 3 Empanada dough discs
  • 120 g Ground beef
  • 1/2 small Onion, finely chopped
  • 1 tsp Paprika
  • 1/2 tsp Ground cumin
  • 4 Green olives, chopped
  • 1/2 Hard-boiled egg, chopped
  • 2 tbsp Beef stock or water
  • to taste Salt & pepper
  • 1 Egg (for wash)

Instructions

  1. Step 1: Sauté onion; add beef and brown. Stir in paprika, cumin, salt, pepper, and stock; simmer 3–4 minutes. Cool.
  2. Step 2: Mix in olives and egg. Fill discs with ~2 tbsp filling.
  3. Step 3: Fold, crimp (repulgue), brush with egg wash.
  4. Step 4: Bake 400°F (200°C) 20–25 minutes or fry 350°F (175°C) until golden; rest 5 minutes.
