Ingredients

  • 300 g Boneless chicken thighs
  • 1 cup Buttermilk
  • 1 tbsp Hot sauce
  • 1 cup All-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Kosher salt
  • for shallow frying Neutral oil (frying)
  • 1 cup All-purpose flour (waffles)
  • 1 tbsp Sugar
  • 1 1/2 tsp Baking powder (waffles)
  • 1 Egg
  • 3/4 cup Milk
  • 2 tbsp Melted butter
  • for serving Maple syrup

Instructions

  1. Step 1: Marinate chicken in buttermilk and hot sauce 1–4 hours. Mix flour, baking powder, and salt for dredge.
  2. Step 2: Dredge chicken; rest 10 minutes. Fry at 350°F (175°C) 5–6 minutes per side until 165°F (74°C). Drain on rack.
  3. Step 3: For waffles, whisk dry ingredients, then add egg, milk, and butter. Cook in a hot waffle iron until crisp.
  4. Step 4: Serve fried chicken atop waffles with warm maple syrup.
